A house in the making.

Una casa en formación.

Muy pronto.

Coming soon.

Dichoso is the Spanish word for fortunate — glad, blessed, well met. We are building Tequila Dichoso as a house that treats that word as a standard, not a slogan. The bottle is not yet offered. The work of earning it has already begun.

Dichoso quiere decir afortunado: alegre, bendecido, bien hallado.

How the house is being raised

Cómo se levanta la casa

Passion, before the pour.

La pasión, antes del trago.

We are raising this brand the way a careful distillery raises a spirit: slowly, in the open, and with the field in mind. Our passion is not for tequila as costume or as a passing cocktail fashion. It is for the plant that takes the better part of a decade to ripen, for the jimador’s coa, for the oven that refuses to be hurried, and for a glass that should still taste of agave after the oak has had its say.

The mark above — three agaves under a gold arch, the name on a banner, Ágave Azul beneath — is the first public statement of that intention. What follows will be relationships with growers, a distillery worthy of the denomination, and a liquid that can stand beside the crest without apology. Until that liquid is ready, this page is the house: an account of what we believe tequila is, and why the artisanal path is the one we have chosen.

No NOM is claimed on this page, and none should be read into it. A distillery number will be published only when a distillery has made the spirit.

The spirit itself

El espíritu

What makes tequila good, and why it is worth the care.

Tequila is a distilled spirit of cooked blue Weber agave, Agave tequilana Weber variedad azul, produced only inside Mexico’s Denomination of Origin. Good tequila begins years before the still. A mature piña — the heart of the plant, generally seven to ten years in the ground — holds the inulin that heat will turn into fermentable sugar. Taken early, it is thin. Taken with judgment, it is sweet, fibrous, and particular to its soil.

Fire

El fuego

Cooking should develop that sweetness, not merely extract it. A masonry oven, held for two or three days, caramelizes the heart and gives the roasted, honeyed, slightly smoky agave note that defines traditional tequila.

Ferment and copper

Fermento y cobre

Fermentation decides the width of the spirit: time, temperature, yeast, and whether some fiber remains in the wash. Copper pot stills then separate the heart of the run from the heads and tails.

Wood, if any

La madera, si la hay

If the spirit is rested, the barrel should season it, not disguise it. Time in American or French oak is a conversation. It is not a coat of vanilla poured on at the end.

The plant, still named

La planta, aún con nombre

A tequila is good when you can still name the plant in the glass: citrus, white pepper, wet clay, cooked agave, grapefruit pith, mineral, a little floral lift. Those are the voice of highland or valley, not of glycerin or oak extract.

Mexican rules permit a small measure of approved additives without disclosure on the label. We regard restraint there as a point of honor. Softness earned in the still is not the same thing as softness added in a finishing tank. The care is worth taking because the raw material cannot be rushed, and because the denomination exists to protect a place. To drink a true tequila is to drink a decade of a specific field, passed through fire, fermentation, and copper.

A short history

Una historia breve

From agave civilization to a protected name.

Long before the word tequila existed, agave was civilization in western and central Mexico: fiber, food, and the fermented sap known as pulque. Distillation enters the written record in the colonial centuries. The prevailing historical account is that Spanish settlers brought the alembic and set it to cooked agave in the lands of what is now Jalisco, in the sixteenth and seventeenth centuries. Claims of earlier stills near Colima are studied and still debated. They do not change the lineage from which the modern industry descends.

The town of Tequila, in the valley under the volcano of the same name, gave the spirit its name and its first great houses. Through the eighteenth and nineteenth centuries, family distilleries turned a regional aguardiente into a trade. Blue Weber agave was selected as the variety that would define it. In 1974 Mexico established the Denomination of Origin. The standard is watched today by the Consejo Regulador del Tequila, under NOM-006. Every lawful bottle carries a NOM: the number of the distillery that made it.

The legal map is precise. Tequila may be produced only in Jalisco and in designated municipalities of Guanajuato, Michoacán, Nayarit, and Tamaulipas, and only from Agave tequilana Weber variedad azul. The categories are a map of time, not a ladder of rank.

Class Clase Rest Reposo What it shows Qué muestra
Blanco Unaged, or only a brief rest in wood Sin añejamiento, o un reposo breve en madera The clearest portrait of the agave El retrato más claro del agave
Reposado Two months to under one year De dos meses a menos de un año Agave, rounded by oak Agave, redondeado por el roble
Añejo One year to under three De un año a menos de tres A deeper conversation with the barrel Una conversación más honda con la barrica
Extra añejo Three years or more Tres años o más Time, provided the agave is not lost El tiempo, si el agave no se pierde

“100% de agave” means every fermentable sugar came from blue Weber agave. A mixto may be as little as 51 percent agave, the rest other sugars. Joven may blend ages, and is sometimes finished with permitted additives. We are building toward the first of those sentences: one hundred percent blue agave, and a class declared only when the liquid has earned it.

The difference we intend to keep

La diferencia que pensamos conservar

The advantage of artisanal tequila.

La ventaja del tequila artesanal.

Artisanal is not a looser word for expensive. It is a way of working. Industrial tequila that meets NOM-006 is still tequila; the Consejo’s certification is the law’s answer to authenticity. The difference is philosophical. One path prizes repeatability and volume. The other prizes origin, and is willing to spend time the market does not require.

Cooking Cocción Masonry hornos, often 48 to 72 hours. Sugars caramelize; the roast stays in the spirit. Pressure autoclaves in a few hours, or a diffuser that can wash sugar from shredded, even uncooked, agave.
Milling Molienda The tahona, a volcanic stone wheel near two tons, presses the cooked piña and leaves fiber in the ferment. The spirit is often rounder, earthier, more viscous. High-speed roller mills. Efficient, clean, and capable of many tons an hour. A different instrument, not automatically a fault.
Ferment Fermento Smaller vats, more time, often with fiber and ambient or house yeast. Vintage and season remain visible. Large stainless tanks and selected yeast, tuned for speed and a stable result.
Still Alambique Copper pot stills, batch by batch, with cuts made by nose and palate. Continuous columns, or mixed stills, built for volume and a lighter, more uniform spirit.

The field is the last advantage, and the one no still can invent. Highland agave, grown in Los Altos above roughly 2,000 meters, often reads sweeter, floral, and citrus-bright. Valley agave, lower and in heavier soils around the town of Tequila and Amatitán, often reads herbal, peppery, and mineral. Neither is the better tequila. Artisanal production is simply more willing to let that difference survive into the bottle. A tahona lot is a choice about flavor, not a certificate of virtue by itself. Many respected houses blend tahona juice with roller-mill juice. The standard we are setting is narrower than a fashion and wider than a single machine: cooked agave, patient fermentation, copper, no costume in the finishing tank, and a place you can name.
